Todays post is a super qick and easy Greek recipe that is perfect for dinner. This recipe will whisk you off to the Mediterranean in less than 30 minutes, who needs fancy trips to Santorini anyway? Just kidding everyone needs a trip to Santorini so if you’d like to hook a gal up I wouldn’t say no…
Greek gyros are basically chicken kebabs but so much better and healthy too so it’s pretty much a win win.
What you will need:
Two chicken breasts
Two Greek flat breads or pitta bread
½ Red pepper
¼ Onion thinly sliced
1 Tablespoon Olive oil
Mediterranean seasoning (salt, pepper, garlic powder, cinnamon, basil)
For the Tzatziki sauce:
Squeeze of lemon juice
¼ Cucumber peeled
To begin, blend all the tzatziki ingredients in a bowl and leave to chill in the fridge for an hour.
Place the chicken in a ziplock bag and beat the chicken until about 1cm thick. Remove from the bag and then rub in the Mediterranean seasoning. In a frying pan pouring in the olive oil and place in the chicken, leave to cook for about 15 minutes, turning every so often.
While the chicken is cooking thinly slice the pepper, onion and crumble some feta.
Once the chicken is fully cooked cut into slices and then assemble your gyro filling with the chicken, onion, pepper, feta and finally drizzling over the tzatziki. It’s a super simple and tasty recipe to make, perfect for dinner and if you make enough for lunch the next day too.
